Banana Bread Waffles with Browned Butter Syrup

Saturday morning breakfasts have been a tradition in my home since I was a little girl. There was something special about waking up to the smell of pancakes and bacon on the weekends. Probably one of my favorite foods to make (or create) are breakfast meals. The combinations of waffles, syrups and pancakes are endless. This past weekend I had several bananas that were ready to be turned into banana bread. The thought occurred to me that why couldn’t I turn those bananas into a banana bread-ish waffle recipe. I wasn’t sure how they would end up, but I thought we’d give it a try. The result was unbelievably good–way better than I had even hoped for!! The texture was moist, perfectly soft and even better than these Banana Hot Cakes I love so much. They held up a little better in waffle form than in a pancake, which I loved! Now..I have to admit one of the best parts about this recipe is the Browned Butter Syrup. Oh, heaven help me from drinking it by the cupful!! It was AMAZING!! The browned butter start to the recipe gives this syrup a nutty-caramel flavor. Drizzled over these waffles and then garnished with Sugared Pecans was heavenly!
