Best Banana Bread Waffles

Saturday morning breakfasts have been a tradition in my home since I was a little girl. There was something special about waking up to the smell of pancakes and bacon on the weekends. Probably one of my favorite foods to make (or create) are breakfast meals. The combinations of waffles, syrups and pancakes are endless. This past weekend I had several bananas that were ready to be turned into banana bread. The thought occurred to me that why couldn’t I turn those bananas into a banana bread-ish waffle recipe. I wasn’t sure how they would end up, but I thought we’d give it a try. The result was unbelievably good–way better than I had even hoped for!! The texture was moist, perfectly soft and a great way to start the morning!

They held up a little better in waffle form than in a pancake, which I loved! Now..I have to admit one of the best parts about this recipe is the Browned Butter Syrup. Oh, heaven help me from drinking it by the cupful. Pure, breakfast bliss!

Banana Bread Waffles

Ingredients

  • 3 ripe bananas peels removed
  • 1 stick butter melted
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • ¼ cup sour cream
  • 1/2 cup milk
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • ½ tsp. salt

Instructions

  • In a mixing bowl and with an electric mixer, blend together the bananas, melted butter and brown sugar until smooth. Add the eggs, vanilla, sour cream and milk and continue to mix until smooth. Add the remaining dry ingredients and mix until batter is smooth.
  • Heat a waffle iron, spray with cooking spray and pour a 1/4 cup of the batter into the waffle maker. Cook until brown and slightly crispy. These waffles will be soft. Serve with syrup, fresh bananas and whipped cream.

This caramel syrup is also great over your favorite ice cream or dessert as well–super versatile.

Browned Butter Caramel Syrup

Ingredients

  • 2 sticks butter
  • 2 cups brown sugar
  • 1 can evaporated milk
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Instructions

  • In a sauce pan, add the sticks of butter and turn to medium-high heat. Let heat until the butter starts to boil. Watch it carefully and once the butter starts to turn brown, turn the heat down, add the sugar and continue cooking at medium heat. Add the can of milk and let the syrup simmer until the sugar is dissolved. Add the vanilla and salt and serve warm over your favorite dessert or pancakes/waffles.
