Carmelized Onion Grilled Cheese Sandwich

This week onions are on sale and I am so excited to share this simple and delicious meal idea with you that will feed a family of 6-7 for under $4! I am not a huge fan of raw onions, but you saute some onions in butter and get them nice and caramelized and I can eat them by the plate full!  I decided to combine my love for sauted onions and the concept of a quick, grilled cheese sandwich and the two together were pure heaven! To give this sandwich an extra special flair I even added very thin slices of pear to my sandwich and that took it over the top. The melted cheese, buttery bread, caramelized onions and the sweetness of the pear was just what I was hoping it would be. If you want a super, simple meal idea that is a little more grown up than your traditional grilled cheese sandwich, give this recipe a try. You will be surprised that even your kids will love it 🙂

Caramelized Onion Grilled Cheese Sandwiches

Ingredients

  • 1 loaf wheat or white bread
  • 2 onions sliced
  • 3-4 Tbs. butter
  • To taste Montreal Steak Seasoning
  • 1 pear sliced thin
  • 8 slices Swiss cheese
  • 8 slices provolone cheese

Instructions

  • Remove the onion skin. Cut the onions in half and slice each half of the onion into very thin slices. In a saute pan heat 3-4 tablespoons of butter until melted. Add the onions to the hot butter and saute on medium-high heat for several minutes until the onions begin to soften and turn brown and carmelized. When the onions are cooked, season them with a little Montreal Steak Seasoning (or salt and pepper) and remove from the heat. Heat a griddle pan to medium heat. Spray the griddle or add a little smear of butter to the pan if you want more flavor. On each piece of bread place one slice of Swiss cheese on one side and a slice of Provolone cheese on the other side. If you are adding pears, slice the pears thinly and place a couple slices of pears on one side of the bread. On top of the pears, add a good portion of the sauted onions. Put the sandwich together and place on the hot griddle to cook. Cook on both sides until the cheese is melted and the tops are golden brown and crusty. Remove from the heat and serve with fresh fruit as a side.
