Cherry Peach Cobbler

 One of my favorite parts about summer is all of the fresh fruit that goes on sale. I love that fresh peaches, apricots, cherries, watermelon and cantaloupe are all on sale this week. I am a huge fan of cobblers and wanted to use some of the fruits on sale to come up with a new, delicious recipe I could share with you. I needed a quick dessert the other night for a family event so I used the peaches and cherries I bought at the store this past week. I had never used fresh cherries in a cobbler before,  but I loved their juicy, sweet flavor they added. I am sure you could use apricots instead of peaches as well, you might need to add a little apricot nectar to loosen them up though. No matter what fruits you choose to use in this recipe, this brown sugar crumble is heaven!! I hope you are having a great week and give this recipe a try 😉

Cherry Peach Cobbler

Ingredients

  • 3 large peaches
  • 2-3 cups fresh cherries pits removed
  • CRUMBLE:
  • 1 stick butter
  • 1 cup brown sugar
  • 1 cup regular or quick oats
  • 1/2 cup flour
  • 1 tsp. cinnamon
  • 1/4 cup flour
  • Dash salt
  • Vanilla ice cream

Instructions

  • Preheat the oven to 350 degrees. Rinse the cherries and peaches in warm water. Remove the pits from two cups of cherries and place the halved cherries in a 9x13 pan. Cut the peaches in half. Remove the pit and cut the peaches (keep the skins on) into bite sized, small pieces.
    Place the peach pieces into the pan with the cherries. Stir them together. In a bowl, place the stick of butter. Have the butter be at room temperature or microwave for a few seconds until it's slightly soft. To the butter add the brown sugar, oats, flour and dash of salt. Sprinkle the crumble over the peaches and cherries until it's evenly spread on top. Place the cobbler into the oven and bake for 25-30 minutes, or until the crumble is golden brown. When the cobbler is cooked, serve with vanilla ice cream.
