Looking at my past posts I realized I need to get off my sweet-tooth kick and post about something savory and salty. These Chipotle Chicken Paninis are the perfect solution. My Mom and I went to Paradise Bakery a couple weeks ago and she got a Chicken Panini Sandwich that was completely sub-par. I was determined to go home and see if we could make this sandwich a little more special. This chipotle mayo takes this sandwich to a whole new level. It’s creamy, a little spicy and full of great flavor. These paninis are simple to make and a great, weeknight meal.
Ingredients
- 6-8 hoagie buns
- 4 boneless skinless chicken breasts
- 8 slices pepperjack cheese or other cheese
- 2 avocados peeled and sliced
- 2 to matoes
- 12 slices bacon
- CHIPOTLE MAYO:
- 1 cup mayonnaise
- 2 chipotle peppers
Instructions
- In a saute pan, cook the bacon until crispy and then set aside on a paper towel to drain. Grill or cook the chicken and season with salt and pepper. Slice the chicken into pieces once cooked. Slice the avocados and tomatoes. Mix together the chipotle mayo together and spread a generous amount on both sides of the hoagie bun. Place slices of the cooked bacon, slices of chicken, slices of tomato and avocado on the hoagie bun. Top with a slice of cheese. Place the sandwiches in a hot press panini maker or on a hot griddle and cook until golden brown on both sides and the cheese is melted.
