There really isn’t a soup at Zupa’s that I don’t love, but one of my favorites is their Yucatan Tortilla Soup. There isn’t anything fancy about it, but I love the spanish flavor, the little bit of spice, the chunky pieces of grilled chicken and the fact it’s nice and light. I was looking for a healthy soup recipe to serve to some friends and family and I decided to recreate this Yucatan Tortilla Soup. It was delicious and I hope you give it a try this weekend. Best part about it, is this week many of these ingredients are on sale at a grocery store near you (chicken, cheese, sour cream, canned beans, tomatoes, cilantro, etc.). Ingredients
- 2 Tbs. olive oil
- 1 white onion diced
- 1 tsp. salt
- Dash red pepper flakes
- 2 Tbs. cumin powder
- 2 Tbs. garlic powder
- 2 Tbs. taco seasoning
- 1 Tbs. chili powder
- 1 cup salsa
- 3 cans chicken broth
- 2 cans corn drained
- 2 cans black beans drained
- 2 cans white beans drained
- 3 cans diced tomatoes
- 1 cup cilantro chopped
- 4-5 grilled chicken breasts seasoned
- TOPPINGS
- More cilantro
- 1-2 avocados diced
- Sour cream
- Fresh lime wedges
- 1-2 cups shredded cheese
Instructions
- Heat an outdoor grill to medium-high heat. Prepare the chicken by removing any excess fat from the chicken breasts. Season the chicken with Montreal Steal Seasoning. Grill the chicken on the outdoor grill until cooked through and grill lines are present. Remove the cooked chicken from the grill set aside.
- For the soup, dice the onion. Heat a large soup pot to medium-high heat. Drizzle the olive oil in the bottom of the pot. Add the onions and saute for 1-2 minutes. Add all of the seasonings to the onions and saute until aromatic. Add the salsa, chicken broth, diced tomatoes and continue to simmer. Add the canned beans, canned corn and dice the chicken into bite sized pieces and add to the soup. Turn the soup to low and let simmer until ready to serve.
- Serve the soup with the shredded cheese, sour cream, lime wedges, chopped cilantro, tortilla chips, etc.
