These Eggnog Pancakes were the hit of cooking class this past week. The kids loved that these pancakes were made with fizzy Sprite & delicious eggnog. The texture of these pancakes is my favorite. They are fluffy, moist, flavorful and deliciously festive. We topped these pancakes with a homemade cranberry butter syrup that made us all want to lick our plates clean. You can serve these pancakes with regular maple syrup or our famous Butter Syrup. No matter how you serve these Eggnog Pancakes, you are going to love them!
Ingredients
- 4 cups eggnog
- 4 eggs
- ⅓ cup canola oil
- ¼ cup sugar
- 1 tsp. Vanilla extract
- 2 tsp. Baking soda
- 4 tsp. Baking powder
- 1 ½ tsp. salt
- 4 cups flour
- CRANBERRY SYRUP:
- 12 oz. fresh cranberries
- 1 ½ cups sugar
- ¼ cup butter
- 1/2 cup water
- Juice of 2 oranges
- Zest of 2 oranges
- ½ cup dried craisins optional
Instructions
- Pancakes: In a large mixing bowl, whisk together the egg nog, eggs, oil and sugar together until smooth. Add the remaining ingredients and continue to whisk until the batter is combined. Heat a griddle to medium high heat. Spray the griddle with cooking spray or spread a little butter on the pan. Pour a 1/4-1/3 cup of batter onto the griddle. Cook the pancakes until lightly golden brown and then flip to the other side. Cook on the other side for a couple more minutes and then remove the pancakes and serve with the cranberry syrup.
- Syrup: Place all of the ingredients into a sauce pan. Bring to a low boil and let the cranberries soften and break down. Simmer until the syrup is as thick as you would like. Serve the syrup over the pancakes.
