This Fiesta Chicken Salad is the perfect meal for a busy night. If you keep grilled and cooked chicken in your freezer you can put this meal together in minutes. The dressing is so simple and delicious!

Ingredients
- Salad:
- 1 pkg. prepared greens or romaine lettuce chopped
- 1 can or frozen corn drained and thawed
- 1 can kidney beans rinsed & drained
- 1 cup shredded or cheddar cheese
- 2-3 boneless chicken breasts grilled
- 2-3 stalks green onions sliced
- 1 large tomato diced
- 1 can olives sliced (optional)
- Tortilla Chips for garnish
- Dressing:
- 1 cup ranch dressing
- 3/4 cup salsa
- 1/2 tsp. salt
- 1 Tbs. lime juice
- 1/4 cup cilantro chopped
Instructions
- Grill chicken breasts or bake until cooked through. Heavily season with Montreal Steak Seasoning or salt & pepper. When chicken is cooked, cut into long strips. Prepare the salad by cutting up the lettuce, tomatoes, olives, green onions, etc. Place all of the salad ingredients into a large bowl. Add the cut chicken, shredded cheese and beans. Serve salad with the ranch/salsa dressing and garnish with chopped cilantro.
Notes
VEGETARIAN OPTION: Omit the chicken and use more beans.
