I can’t believe within a month or so, snow flakes will start to fall and pretty soon the idea of grilling out on our grill will no longer be appealing. I have to admit I get a little anxiety this time of year at the thought of the warm, sunny days being over. I love the holiday’s and all, but I have to admit summer is my favorite time of year. I seem to have more energy and am revitalized by the green grass, blue sky, fluffy white clouds and the beautiful flowers everywhere. Summer weather is just the best..in my book anyway 😉
I guess I can rejoice in the fact that fall brings pumpkin desserts, homemade soups, books by the fire and lots of other wonderful things. I guess I need to just embrace fall with all of it’s cooler glory. Until my grill is covered in snow however, I plan on getting at least a couple more weeks use out of it. Before fresh pineapple goes out of season, I wanted to share this really simple recipe that our family loves. On those weekends I’m trying to be a little healthier, one of my favorite sweet treats are these Honey Lime Grilled Fruit. The glaze is just sweet enough to compliment the fresh, sweet fruit and add a little dallop of ice cream on top of these babies and you have a treat everyone will love! Serve with a lowfat vanilla yogurt or gelato and you have a dessert with very little calories and all the flavor and sweetness you crave.
