July is probably my favorite month of the year. I love summer and everything having to do with warm weather, swimming, kids being out of school, fireworks, barbecues, parades, night walks, and vacations. It is such a great time of year! The winters seem to last way too long here in Utah, so I relish every minute of blue sky and warm weather.
I am excited to share with you one of my favorite summer desserts. I don’t usually fuss with making pies because they take longer than a quick cookie or bar, but this pie is well worth the effort. It is so refreshing and cool it would be a great dessert for any of your upcoming 4th of July events. Strawberries are on sale in nearly every state this week, as well as ice cream, so this is an inexpensive and fun treat for your family to enjoy after a long day in the sun. Hope you love it!
