One of my secret weapons to an easy meal solution are these homemade Pita Pizzas. Now, normally you’d think pizzas…what’s easy about those? Well, if you use a couple of my secrets, these pizzas can be thrown together and served in less than thirty minutes. I buy the pitas from Costco and they are so great. They can even freeze for up to a year so you can have them on hand all the tie. Here is the brand I like the best LINK.
A meal time saver in our home are the flat bread pita sandwiches from Costco. I keep these in my freezer at all times for quick wraps, sandwiches or pita pizzas. They freeze great for up to 6 months and work perfectly with this recipe.
I also talk a lot about my freezer grilled chicken meal planning tip. This method seriously saves SO MUCH TIME when meal prepping. When chicken goes on sale (like it is this week), buy several extra pounds and grill (or slow cook them) for future meals. Just keep the chicken breasts in the freezer until ready to use.

Ingredients
- 1 pkg. pita flatbread
- 3-4 cups mozzarella cheese shredded
- 1 cup ranch dressing
- TOPPINGS:
- 1 zucchini sliced thin
- 1 roma tomato diced (or use grape tomatoes)
- 1/2 red onion sliced
- 1/2 cup mushrooms sliced (optional)
- 1 bell pepper diced
- 1/4 cup parsley chopped (optional garnish)
- Salt and pepper to taste
Instructions
- Preheat the oven to 425 degrees.
- Prepare the chicken and/or sausage as desired (grilled, sauted, etc.). Prepare all of the vegetables by slicing them or dicing them.
- Place the pitas flat onto a cookie sheet that has been sprayed with cooking spray. Top the pitas with your favorite sauce and toppings (ranch goes the best with these pizzas). Sprinkle the shredded cheese on top of the pizza and bake for 10-15 minutes, or until the top is nice and bubbly and golden brown. Slice and serve.
