Pancakes: In a large mixing bowl, whisk together the egg nog, eggs, oil and sugar together until smooth. Add the remaining ingredients and continue to whisk until the batter is combined. Heat a griddle to medium high heat. Spray the griddle with cooking spray or spread a little butter on the pan. Pour a 1/4-1/3 cup of batter onto the griddle. Cook the pancakes until lightly golden brown and then flip to the other side. Cook on the other side for a couple more minutes and then remove the pancakes and serve with the cranberry syrup.
Syrup: Place all of the ingredients into a sauce pan. Bring to a low boil and let the cranberries soften and break down. Simmer until the syrup is as thick as you would like. Serve the syrup over the pancakes.
