Instructions
In a microwave safe bowl, add the peanut butter and chocolate chips. Melt in 30 second increments until the chocolate and peanut butter are combined and melted. Remove from the microwave and pour in the one cup of honey and vanilla to the mixture and stir. set aside. In a large bowl, combine together the oats and flax seed. Pour the peanut butter mixture over the oats and stir until combined. The mixture will be pretty thick and that is okay. Cover two cookie sheets with parchment paper. Spoon one tablespoon portions of the mixture onto the cookie sheet into a round ball (or use an ice cream scoop to make them all uniform). Let the balls cool in a fridge or on the counter. Once they are cooled, you can store them in the fridge for a couple weeks, or the freezer for a year.
