In a large mixing bowl, whisk together the milk, applesauce, lemon juice, eggs and melted butter. Whisk until smooth. Rinse and core the apples. Cut apples into small pieces and put into the bowl. Combine and then add the remaining ingredients. Whisk until flour is incorporated and the batter comes together. Heat a pancake griddle to medium high heat. Spray with non stick cooking spray or put some butter on the griddle. Pour a fourth cup of the batter onto the griddle. Cook until bubbles pop and the bottom side is golden brown. Cook on the other side until browned. Top with apple pie filling, candied nuts and/or maple syrup.
