Core and slice the apples. Add all of the ingredients into a large sauce pan. Bring the apples and sugar to a slow boil and boil for 5-8 minutes until apples are soft. With a slotted spoon, remove the apples and set aside in a bowl while you thicken the sauce. and continue to simmer sauce until thick. Add back in the apples to the pan and bring back up to a low boil. Boil for a couple more minutes. Remove apples from the stove and let cool slightly before you pour over ice cream. Top with candied nuts if you wish.
