In a saute pan, cook the bacon until crispy and then set aside on a paper towel to drain. Grill or cook the chicken and season with salt and pepper. Slice the chicken into pieces once cooked. Slice the avocados and tomatoes. Mix together the chipotle mayo together and spread a generous amount on both sides of the hoagie bun. Place slices of the cooked bacon, slices of chicken, slices of tomato and avocado on the hoagie bun. Top with a slice of cheese. Place the sandwiches in a hot press panini maker or on a hot griddle and cook until golden brown on both sides and the cheese is melted.
