In a mixing bowl, whisk together all of the wet ingredients. Grate the zucchini and let drain on some paper towels for a few minutes. Add all of the rest of the ingredients to the dry ones and mix until combined. Add the chocolate chips (optional) to the bread and fold it all together. Spray and dust with flour two bread loaf pans. Bake at 325 degrees for 1 hour or until a toothpick comes out clean. Remove breads from the oven, let rest for 10 minutes and then remove from pan. Serve warm or cold.
