Pour all of the marinade ingredients into a Ziploc gallon sized bag and mix together. Place the chicken into the marinade ingredients. Keep the chicken in the fridge marinating until ready to prepare the meatl. The chicken can marinade overnight for for a couple hours. When ready to grill, remove from the marinade and cook for 5-7 minutes on either side, or until the chicken is no longer pink in the center (if you don't have a grill, just saute in a pan on high heat with a little olive oil until golden brown. Pace a lid on the pan and cook until the center of the chicken is done.). Prepare the mango guacamole recipe (recipe seperate) and set aside. To prepare the sandwiches, spread some of the guacamole on a hamburger bun or large roll. Slice the lettuce, tomatoes and pepperjack cheese into thin strips. Add these to the sandwich. Spread some mayonnaise on one side of the bun and guacamole on the other. Serve hot.
Notes
HEALTHIER OPTION: Serve the chicken with the guacamole without the bun (either lettuce wrapped or just on a plate with the guacamole). Serve on a whole wheat bun i you want a bun.
