Grill or saute the chicken until cooked through. Season with salt & pepper. Dice cooked chicken into bite size pieces and set aside. Chop the lettuce and place in a large salad bowl. Dice the mangos, red bell pepper, green bell pepper, avocado, and cucumber and place on the top of the salad. For the dressing, place the ingredients in a bowl or blender and whisk together until combined and emulsified. Once the dressing is blended, add the sesame seeds. Place the cooked chicken on top of the salad and sprinkle the Chinese noodles on top. When serving the salad, place a cup of cooked rice on the bottom of the plate. Top with the salad and drizzle with the dressing when ready to serve.
