Lay each pita bread flat onto a baking stone or greased cookie sheet. Brush each pita with a healthy dose of olive oil. Slice the fresh mozzarella cheese and place on top of each pita. Slice the tomatoes and place on top of the cheese. Rinse some fresh basil and break off the leaves and place on top of the tomatoes. Season generously with cracked black pepper and kosher salt. Broil each pizza in an oven for 5-8 minutes, or until the top is golden brown and the bottom crust is slightly crisp. Continue to bake until all of the pizzas have been cooked. Serve pizzas hot.
