Preheat oven to 400 degrees. Combine all of the ingredients except the potatoes together in a large bowl. Stir to blend well. Add the cut potatoes to the seasoning mixture and toss to coat. Transfer the potatoes to a large cookie sheet or baking stone. Spread them out into a thin layer. Bake until the potatoes are golden browned and tender, about 35-40 minutes. Flip the potatoes halfway through cooking.
