1/4cupdried cranberries
DRESSING:
1/3-1/2cupsugar
1Tbs.dried onion
3/4tsp.salt
1tsp.poppyseeds
3/4cuplemon juice
1/2tsp.dry mustard
1/2cupolive oil or vegetable oil
Instructions
If you are adding chicken to this salad, bake or grill two chicken breasts that have been seasoned with salt and pepper. Once the chicken is cooked through, remove from heat and let rest for 5-10 minutes. Dice the chicken into bite sized pieces and serve on the top of the salad. For the salad: Chop romaine lettuce and spinach and place in a large bowl. Shred cheese, and cut apples and pear. Place apples and pear pieces in a small amount of orange juice or lemon juice to prevent browning. Mix all dressing ingredients together until smooth and combined (you can put all of the ingredients in a food processor or blender until smooth). Place all of the salad ingredients into the bowl with the romaine and spinach and serve with the poppyseed dressing.
