Drizzle the olive oil all over the bottom of a slow cooker. Put the boneless pork roast in the slow cooker and sprinkle with all of the seasonings. Pour the orange juice around the bottom of the slow cooker and around the pork. Cook the pork with the lid on for 3-4 hours on high heat or 5-7 hours on low heat. Cook until the pork easily shreds.
Remove any pieces of pork fat that you can easily see in the slow cooker. Shred the pork with two forks in hand until the pork is all broken up. Season with salt as needed.
While the pork is cooking you an prepare the fresh salsa. Prepare the fruit and vegetables and add to a bowl. Drizzle with the juice of the lime. Toss.
Serve the pulled pork on a roll or bun and top with the mango salsa and bbq sauce.
