Cook (grill) chicken breasts and cook until center is no longer pink. Season with salt and pepper and then dice into 1/2 inch pieces when cooked. In a large bowl place the chopped lettuce and spinach. Add the croutons on top, fresh raspberries, candied pecans, feta cheese, chicken and onions.
For the dressing, mix all the ingredients together in a blender. Add a little more sugar or fruit to make sweeter...the dressing is meant to have a sweet and tangy flavor. Drizzle dressing over the salad.
