Raspberry Chicken Spinach Salad

  • 1 6 oz. bag spinach
  • 1 head lettuce chopped
  • 1/2 cup croutons
  • 6 oz. fresh raspberries
  • 1/2 cup candied pecans
  • 1/2-1 cup feta cheese or gorgonzola
  • 1/2 red onion diced
  • 2 boneless skinless chicken breasts diced
  • 1/2 cup fresh or frozen raspberries
  • 3/4 cup raspberry jam
  • 1/4-1/2 cup sugar
  • 1/2 cup apple cider vinegar
  • 1 garlic clove minced
  • 1/4 cup vegetable oil
  • Salt to taste
  • 1 tsp. salt


  • Cook (grill) chicken breasts and cook until center is no longer pink. Season with salt and pepper and then dice into 1/2 inch pieces when cooked. In a large bowl place the chopped lettuce and spinach. Add the croutons on top, fresh raspberries, candied pecans, feta cheese, chicken and onions.
  • For the dressing, mix all the ingredients together in a blender. Add a little more sugar or fruit to make sweeter...the dressing is meant to have a sweet and tangy flavor. Drizzle dressing over the salad.
