Fill a large pot half way with water. Put on the stove and bring the water to a boil. Add a dash of salt. Once it’s boiling add the pasta to the water and boil until al dente.
Dice, slice and chop the pepperoni, tomatoes, red onions and cucumbers. Add into a serving bowl.
In a smaller bowl whisk together the dressing ingredients until smooth. Pour over the vegetables.
Drain the cooked pasta and rinse with cold water. Add the pasta to the vegetables and toss. Add extra feta as a garnish.
