Is a Simple Italian Pasta Salad one of your go-to side dishes in the summer? It is for me! This salad is super simple to make and has so much flavor you won’t be bored by the easiness of this recipe. You can of course just pour a bottled Italian dressing on this salad but our homemade dressing gives this salad such a better flavor and intensity. No one likes a dry and boring Italian pasta salad.

This salad is a simple, yet flavorful, salad you will want to make before the summer is over! You can make this salad as a main dish or a side dish to any meal. You can also add or omit any ingredients you would like. This salad is very flexible and easy to adjust to your families likes.

Simple Italian Pasta Salad

Ingredients

  • 1 lb. pasta of choice with water to boil
  • 1 cucumber diced
  • 1 cup grape tomatoes halved
  • 1 cup pepperoni or salami sliced
  • ¼ red onion diced
  • ½ cup feta crumbled
  • Dressing:
  • cup olive oil
  • ¼ cup vinegar
  • ¼ cup balsamic vinegar
  • 2 Tbs. parmesan cheese
  • 2 tsp. Sugar
  • 1 clove garlic minced
  • 1/2 tsp. Salt
  • ½ tsp. Black pepper
  • 1/2 tsp. Oregano
  • 1/2 tsp. Basil
  • 1/2 tsp. Parsley
  • Pinch of red pepper flakes

Instructions

  • Fill a large pot half way with water. Put on the stove and bring the water to a boil. Add a dash of salt. Once it’s boiling add the pasta to the water and boil until al dente.
  • Dice, slice and chop the pepperoni, tomatoes, red onions and cucumbers. Add into a serving bowl.
  • In a smaller bowl whisk together the dressing ingredients until smooth. Pour over the vegetables.
  • Drain the cooked pasta and rinse with cold water. Add the pasta to the vegetables and toss. Add extra feta as a garnish.
