For the mayo, combine the mayonnaise and chipotle peppers and serve on the buns. Slice the avocados, cheese and chop the cilantro. In a saute pan, add the chopped onion and bring pan up to medium-high heat. Add the ground beef/turkey to the pan and break apart with a wooden spoon until crumbled. Add the remaining ingredients and let simmer on low-medium heat until cooked through and seasons combine. If the meat is too dry, you can always add extra diced tomatoes if you would like. Serve the warm meat on a hamburger bun with the chipotle mayo, sliced avocados, cheese and fresh cilantro for garnish.
