In a mixing bowl, whisk together the milk, molasses, eggs, oil and brown sugar. Mix until smooth. Add the spices, baking soda and baking powder and the flour one cup at a time. Add a little more or less of the flour as needed to get the batter the right consistency.
Heat a flat griddle to medium-high heat. Spray with cooking spray or a thin layer of butter.
Pour a 1/4-1/3 cup of the batter on the griddle. Cook on both sides until golden brown and the pancake is light and fluffy.
When the pancakes are cooked through, serve with maple syrup, bananas and whipped cream (optional).
