I made this salsa to go with some yummy pineapple street tacos. Super simple, super delicious! It holds its own by itself with some tortilla chips but tastes great as a topping to any grilled chicken or fish too! In my dream world where my kids are all quietly playing by themselves, the dog isn’t barking at joggers and I haven’t lost patience with the Comcast guy that has been at my house for 8 hours, I would have grilled the pineapple first, but oh well…its still super tasty! With only 5 simple ingredients it sure adds tons of flavor to a dish!
