This Cilantro Lime Rice is the perfect side dish to all of your favorite Mexican entrees.
Ingredients
- 2 Tbs. butter
- 1 1/4 cup rice
- 2 1/4 cup chicken broth
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 lime juiced
- 2 Tbs. + 2 Tbs. cilantro chopped
- 1/4 tsp. cumin
Instructions
- In a skillet, melt butter and add rice. Let cook for 1-2 minutes. Add remaining ingredients and bring to a boil. Reduce heat, cover and cook for 18-20 minutes. Fluff with fork and serve. Garnish with extra, fresh chopped cilantro.
