The other night when I made the awesome Panko Crusted Tilapia fillets I ended up doubling the batch which left me with several fillets for the next night. I decided to switch up the recipe a bit and turn the fish fillets into an awesome fish sandwich. I used the homemade tartar sauce and combined it with some green onions, red cabbage and green cabbage. Stirred it all up until it was nice and juicy and then sliced some fresh tomatoes for on top of the fish. I reheated the tilapia in a saute pan with a little olive oil until they were crispy and then served them on a warmed bun. Drizzle with a little extra fresh lemon and this meal took on a whole new dimension that we all loved!! The buttery, flavorful fish just melts in your mouth with a crispy, cool coleslaw to balance it all out perfectly. The hearty bun helped fill up all of my kiddos and it was a meal I will definitely be bringing back later this month. Inexpensive, yet full of high end flavor and ingredients. Hope you enjoy 😉
