This healthy, fresh, delicious salsa goes perfectly with the Santa Fe Chicken I posted about yesterday. It’s full of protein, fresh vegetables, avocados and cilantro. The dressing makes this salsa extra flavorful and it so delicious on fish, chicken, beef or serve with tortilla chips.
Ingredients
- 1 can garbanzo beans drained
- 1 can black beans drained
- 2 avocados peeled and diced
- 8 oz. Grape tomatoes halved
- 1/2 cup cilantro chopped
- 1 orange bell pepper diced
- 1/2 red onion diced
- Dressing:
- 1 Tbs. Olive oil
- 2 Tbs. Lime juice
- Salt and pepper to taste
- 1/2 tsp. Cumin powder
- 1/2 tsp. Paprika
- Dash cayenne pepper
- Tortilla Chips
Instructions
- Open and drain the cans of beans and pour the beans into a serving bowl. Cut the avocados and tomatoes and add to the beans.
- Chop the cilantro, dice the bell pepper and add to the bowl. Season as desired (with more or less seasonings) and serve with tortilla chips.
