Before winter comes to an end I wanted to remind you of a winter-holiday favorite recipe of ours. for Gingerbread Pancakes. I can’t get enough of gingerbread flavors and think these pancakes would be well loved served up this weekend. Top them with whipped cream, bananas and your favorite maple syrup. You’re going to love these! Enjoy 🙂
Ingredients
- 1 1/4 cup whole milk
- 1/3 cup molasses
- 2 eggs
- 3 Tbs. cooking oil
- 1/4 cup brown sugar
- 2 tsp. ground ginger
- 2 tsp. cinnamon
- Dash nutmeg
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 2 cups flour
- Bananas sliced
- Maple Syrup
- Whipped Cream
Instructions
- In a mixing bowl, whisk together the milk, molasses, eggs, oil and brown sugar. Mix until smooth. Add the spices, baking soda and baking powder and the flour one cup at a time. Add a little more or less of the flour as needed to get the batter the right consistency.
- Heat a flat griddle to medium-high heat. Spray with cooking spray or a thin layer of butter.
- Pour a 1/4-1/3 cup of the batter on the griddle. Cook on both sides until golden brown and the pancake is light and fluffy.
- When the pancakes are cooked through, serve with maple syrup, bananas and whipped cream (optional).
