There are many recipes a mother might enjoy on Mother’s Day,
but after having these Homemade Cookie Ice Cream Sandwiches last week, I have
to admit these are the treat of choice for me this Sunday. Especially with the
warmer weather, this dessert is going to be the perfect way to end our Mother’s
Day BBQ this weekend. Who doesn’t love a chocolate chip cookie? Combine two
homemade chocolate chip cookies sandwiched between your favorite ice cream, and
you have a treat for any special person in your life! I used a traditional chocolate
chip recipe and filled them with Schwan’s Cookie Dough ice cream, but the
options are limitless. Next I will be trying a dark chocolate cookie with a
peanut butter ice cream in the middle. Or, how about a snickerdoodle with a salted caramel ice cream? Oh, so many options to try! That might just have to be our Father’s
Day dessert for Todd 😉
