I wanted to highlight a healthy treat that my family is still loving a couple years after I first posted it. Before apple season is over, I hope you have a chance to enjoy this healthy treat one of these cold, wintery days. If you are like me, and trying to cut back on calories, these microwaved apples are a perfect way to curb your sweet tooth. If you are really wanting a special treat, add a scoop of ice cream on top of the apple for a dessert that is very satisfying and under 300 calories. Now that is something to get excited about this weekend!
Ingredients
- CRUMBLE:
- 1 cup almonds
- 2-3 Tbs. butter
- 1 tsp. cinnamon
- Dash nutmeg
- 3/4 cup brown sugar
- Dash salt
- 2 cups instant or regular oats
- 7-10 apples cook one at a time
- 1/2 gallon vanilla ice cream optional
Instructions
- Rinse the apple. Cut the apple in half and scoop out the center seed/core of the apple and the end stem pieces. Place the two apple pieces onto a microwave safe bowl or plate. For the crumble, combine all of the ingredients into a food processor and pulse until the ingredients are well combined and chopped. Sprinkle one tablespoon of crumble onto the top of each apple. Microwave the apple for 3 minutes. Remove from the microwave and sprinkle with extra crumble if you like. Serve warm. Also great with vanilla ice cream on top 🙂
