Apple Waffles with Apple Cider Syrup

There is nothing more fall than apples, apple juice and apple cider. This is the time my sweet tooth craves anything apple flavored. Apple Cake, Apple Puff PastriesSpiced Apple Wassail, Apple Dips, Apple Pancakes, etc. You name it, if it has apples in it, I will love it.

Apple Waffles with Cinnamon Cider Syrup

Ingredients

  • WAFFLES:
  • 2 cups apple juice
  • 1 1/4 cup milk
  • 1/2 cup oil
  • 6 eggs
  • 1 1/2 tsp. salt
  • 3 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1/2 cup sugar
  • 1/2 cup dried apples optional
  • 2 1/2 cup white flour
  • 2 1/2 cup wheat flour
  • APPLE CIDER SYRUP:
  • 1 stick butter
  • 1 cup brown sugar
  • 3 apples diced and core removed
  • 1 tsp. cinnamon
  • 1/4-1/2 cup apple juice or cider
  • Dash salt

Instructions

  • In a large mixing bowl, whisk together the apple juice, milk, oil and eggs and combine together. Then add the salt, baking powder, baking soda, cinnamon, vanilla extract, sugar and dried apples and stir. Add the flour to the batter and mix just until incorporated. If the batter is too runny, add a few more tablespoons of flour. Once the batter is to the consistency you like, turn on the waffle maker and heat up.
  • When the waffle iron is hot, spray both sides of the griddle with non stick cooking spray. Pour about a half cup of the batter into the waffle iron. Cook until golden brown and then remove.
  • While the waffles are cooking, make the apple cider syrup. For the syrup, rinse off the apples and remove the core. Slice into pieces and dice into small pieces. Place the butter, sugar and apples into a sauce pan and bring to medium-high heat. Bring the mixture to a simmer and then add the remaining ingredients. Add enough apple juice/cider to make the syrup the consistency you like. As the mixture cooks, it will thicken, so add a little juice at a time so it doesn't get too runny.
  • Serve the apple syrup over the waffles when they are cooked.
  • This recipe makes quite a bit, so you can half the recipe if you wish.
