Thick and Meaty Beanless Chili

This chili is fantastic! If you have a family member (like I do) who doesn’t like beans, this is an amazing, meaty, flavorful, spiced chili. Top this chili with all your favorite toppings and you have a hearty, home cooked chili that is great for a cold winter’s night. This chili would be awesome with cornbread, garlic toast or even over a hot dog. Pretty much this chili is great no matter how you serve it.

Ingredients

  • 1 lb. lean ground beef
  • 1 lb. ground pork sausage
  • 3 stalks celery diced
  • 1 red onion diced
  • 1 red bell pepper diced
  • 1 orange or yellow bell pepper
  • 1 green bell pepper diced
  • 1 Tbs. garlic powder
  • 2 tsp. salt or to taste
  • 1 tsp. black pepper
  • 2 Tbs. chili powder
  • 1 Tbs. paprika
  • 3-4 garlic cloves minced
  • 1 Tbs. cumin powder
  • 1/2-1 tsp. crushed red pepper flakes
  • 1 1/2 Tbs. brown sugar
  • 3 cans diced tomatoes
  • 1 can tomato sauce or tomato soup
  • GARNISHINGS:
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1-2 avocados
  • 1 bag tortilla chips

Instructions

  • Dice the onion into small pieces. Add the onions into a large soup pot and turn the heat to medium-high heat. Drizzle with a little olive oil and saute until the onions are tender. To the onions, add the ground beef and the pork sausage. Break up the meat into small pieces and let it continue to cook for a few minutes. While the meat is cooking, dice the peppers and celery into small pieces. Add these vegetables to the meat mixture and continue to saute. Add all of the seasonings and continue to cook. Once the meat is cooked and the vegetables are soft, add the diced tomatoes, tomato soup and stir. Turn the chili to low heat and let it simmer for a couple hours until ready to serve.
