I am always on the look out for recipes that use up the wheat kernels in my food storage, without having to pull out my wheat grinder. Sometimes I just need a quick and easy recipe to make on the weekend, or before the kids head off to school. When I saw Crystal’s recipe on her blog (and vide0–it’s super fun!) for these pancakes, I knew we needed to share it with you. You’re going to love these pancakes. Have a wonderful weekend!
Ingredients
- 1 cup milk
- 1 cup wheat kernels whole and uncooked
- 2 eggs
- 2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 banana
- 2 Tbs. honey or sugar
- 1-2 Tbs. water as needed
- Toppings:
- Syrup
- Nuts
- Bananas
Instructions
- Put milk and wheat kernels in a blender.
- Blend on highest speed for 4-5 minutes or until batter is smooth. Add eggs, oil, baking powder, salt and honey or sugar. Pulse until ingredients are well combined. If batter is too thick, add 1-2 tablespoons of water.
- For each pancake, pour some batter from the blender onto a hot, greased griddle or into a large frying pan. Cook, flipping pancake when bubbles pop and create holes. Serve with favorite toppings.
