Caramel Apple Pie Topping

Only one more day until Thanksgiving and I can hardly wait. This week I have been sharing ‘untraditional’ pie recipes with you, I thought I would finish it off with this recipe. I love apple pie. If I am making a traditional apple pie, I always make this Apple Pie with Pecan Crumble. There are times though that I don’t have time to make a homemade pie crust and a crumble topping. The other day I was craving apple pie but wanted a more simple solution. I came up with this caramel apple pie filling and we had it over ice cream and it was every bit as heavenly as an apple pie–without all of the headache and mess. Drizzle this all on top of vanilla ice cream, add some candied pecans and you have a dessert perfect for any holiday. Simply delicious!

Caramel Apple Pie Topping

Ingredients

  • 7 apples cored and sliced into thin pieces
  • 2 cups brown sugar
  • 2 tsp. vanilla
  • 1/2 tsp. almond extract
  • 2 Tbls. corn starch
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 Tbls. butter

Instructions

  • Core and slice the apples. Add all of the ingredients into a large sauce pan. Bring the apples and sugar to a slow boil and boil for 5-8 minutes until apples are soft. With a slotted spoon, remove the apples and set aside in a bowl while you thicken the sauce. and continue to simmer sauce until thick. Add back in the apples to the pan and bring back up to a low boil. Boil for a couple more minutes. Remove apples from the stove and let cool slightly before you pour over ice cream. Top with candied nuts if you wish.
