Pumpkin Chocolate Cookies

Here is one of my favorite EASY cookie recipes. These cookies couldn’t get easier, they have only THREE ingredients…canned pumpkin, chocolate chips (optional), and 1 spice cake mix. To make these cookies just mix the dry cake mix together with the canned pumpkin (1/2 of a large can of pumpkin), throw in the chocolate chips, put spoonfuls of the dough on a cookie sheet, bake at 350 for 10-12 minutes (or until cake-like texture) and enjoy!

These are also a great ‘food storage’ treat to have on hand. Comfort foods are important to have in your storage–especially if we had to eat solely out of our food storage for awhile. Each of these ingredients can be stored long term, so stock up when they are on sale! Who doesn’t want chocolate in your storage? I have also heard this recipe is a Weight Watchers favorite–without the chocolate chips these cookies are VERY low fat. It helps you feel better about eating cookies 🙂 If you are not worried about calories (I should be!), these are also great with cream cheese frosting. YOu can sandwich the frosting in between two cookies and boy are they good!
