Ginger-Lime Pork Tenderloin

Happy New Year everyone! This is a recipe that I have been making for over 10 years and it is quick and easy to throw together.  The new year is a time we are all looking for healthy, homemade meals we can feed our family. One way to cut calories is by marinating your meat to add extra flavor without all of the extra calories. I love the Thai inspired flavors in this Ginger-Lime Pork Marinade–with out the hassle of odd ingredient typical in some Thai foods.  This pork can be served with a simple salad using extra marinade as the dressing, because of the amazing flavor you don’t really need to put much work into a side dish as the meat can easily stand alone.  Pouring some of the marinade over steamed asparagus or steamed brussel sprouts is another great option.  The possibilities are endless.
