Have you heard of Golden Mashed Potatoes before? I found a recipe similair to this one several years ago and have been making it every fall since. The recipe is simple. It’s just a basic mashed potato recipe but with sweet potatoes in place of some of the potatoes. It seems slightly odd, but it is actually really good. The sweet potatoes add a slight sweetness to this dish that balances out all of the garlic and savory aspect of the potatoes. Not only is there a better depth of flavor compared to traditional mashed potatoes, but the color is really beautiful. The golden, orange color is so pretty on a plate with stuffing, turkey or any main dish you wish to serve these with. Even my husband who refuses to eat sweet potatoes (shameful, I know ;), had to admit that he loved this recipe. It was hard for him to admit to, but he did..and for good reason.
