Well, four kids off to school and one left to go tomorrow. This has been such a silly ‘back to school’ marathon for our family. With five kids with five different schedules, it has been several weeks of ‘back to schooling it’ for our kiddos. This morning I had to say goodbye to our oldest, darling girl. I will miss her around our home! She is such a ray of sunshine for our family and I will really miss all of them this go round. I have to admit I really like it as my kids are getting older. Yes, there can be teenage drama, but I love having these big kids I get to hang out with and be friends with. I think it’s the first time in my mothering “career” that I am legitimately SO sad summer is coming to an end. We made some great memories though and I will hold onto those as we go forward with a quiet house 😉 Good thing the 3:00 rush comes and we’re all back in the saddle again and onto the night time crazy-time that we all love so much! Ha. Well, if you are in need of a healthier-after school snack, these Apple Pie Oatmeal Cookies are super fun and different! We have apples coming off our tree like crazy, so I wanted a way to use them up. These cookies are fairly low in sugar (compared to a regular cookie) and have some good, whole grain goodness to help fill the kids up. It’s a win-win for all of us and if we ever run out of time for breakfast, I froze several of these to feed them on the way out the door. Who wouldn’t love a cookie for breakfast? I know I would!
