Homemade Kind Bars

Ingredients

  • 1/3 cup almond butter
  • 1/2 tsp. salt
  • 1/3 cup honey
  • 1/3 cup maple syrup
  • 8-10 medjool dates pits removed
  • 2 tsp. vanilla extract
  • 1 cup almonds chopped
  • 1 cup regular oats
  • 1/3 cup milled flax seed
  • 2/3 cup rice krispy cereal
  • 2/3 cup dried cranberries
  • 1 cup dark chocolate chips

Instructions

  • In a food processor, add the almonds and puree until the almonds are chopped into small pieces (or you can do this by hand). Measure out the almond butter, salt, honey and maple syrup pieces (or you can do this by hand). Measure out the almond butter, salt, honey and maple syrup into a food processor or blender. Remove the pits from the dates and add to the food processor as well. Blend these ingredients together until completely smooth. Add the vanilla extract and mix well. If your food processor container is microwavable, microwave this mixture for 1-2 minutes, or until soft. If it’s not, this isn’t necessary but will help it mix a little easier.
  • In a mixing bowl, combine the chopped almonds, oats, flax seed, krispy cereal, cranberries and chocolate chips. Pour the wet mixture over the dry ingredients and stir until all of the dry items are wet and mixed together.
  • Spray an 8x8 pan with cooking spray. Pour the granola bar mixture into the pan and press down with a fork until the entire pan is the same thickness. Cover the pan with some saran wrap and keep in the fridge for 30-60 minutes. Once the bars are cooled, turn the pan over on the counter so the bars come out of the pan and are in a perfect square. With a sharp knife, cut the bars into whatever shapes you prefer. Wrap them individually in saran wrap and keep in the fridge or freezer until ready to serve.
