Strawberry Bread Pudding

It’s Easter and on this special holiday, just any old dessert won’t do. We are planning on having Strawberry Vanilla Bread Pudding and I’m so excited! This dessert is special in all aspects. Creamy, soft bread pudding, strawberry filling, and a topping of smooth, vanilla cream sauce. It is a piece of heaven on earth!! Happy Easter and hope you enjoy.

Strawberry Vanilla Bread Pudding

Ingredients

  • PUDDING:
  • 2 cups heavy cream or whole milk
  • 1 1/2 cups milk
  • 2 1/2 cup sugar
  • 3 tsp. vanilla
  • 2 eggs
  • 2 Tbs. butter melted
  • 13 sliced white bread or french bread dried
  • STRAWBERRY MIXTURE:
  • 4 cups fresh strawberries
  • 3/4 cup sugar
  • 1 tsp. lemon juice
  • VANILLA SAUCE:
  • 1 cup heavy cream
  • 3/4 stick butter
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 2 Tbs. flour

Instructions

  • Pudding:
  • Cut the bread inot one inch pieces (the drier the bread the better). Place the bread in the bottom of a greased 9x13 pan. Whisk together the cream, milk, sugar, vanilla and eggs. Pour this mixture all over the bread evenly. Prepare the strawberry mixture (below) and pour on top of the milk/bread mixture.
  • Strawberry Mixture:
  • Place the strawberry mixture ingredients together into a food processor and pulse several times until the strawberries are broken down. Pour this mixture over the top of the milk and bread mixture. Bake covered with tinfoil at 350 for 55-65 minutes or until the center is somewhat firm and the top is lightly golden brown. While pudding is cooking, make the vanilla sauce.
  • Vanilla Sauce:
  • Place all of the vanilla sauce ingredients into a sauce pan and simmer until the sugar is dissolved and the sauce is smooth. Serve with extra heavy whipped cream and more fresh, sliced strawberries for garnish.
