Do you love Cafe Rio as much as I do? I LOVE their sweet pork salad and could eat that every day for lunch if I had the budget for that. Since that’s not really an option, I have relinquished the fact that making copy cat Cafe Rio recipes are almost just as good 🙂 Since I tend to always order pork when I am there, I wasn’t as familiar with their chicken options. That is, until a friend of mine gave me a copycat recipe for their shredded chicken.
With a tweak of the original recipe, a few more seasonings and some lime juice I ended up loving the results! This shredded chicken, besides the fact it comes together in only a few minutes, is great on tacos, salads, burritos or I even added the leftover chicken into a Chicken Tortilla Soup. It was delicious every way we served it and this recipe will be making a reappearance on another busy night for sure!!
Ingredients
- 2 lbs. boneless skinless chicken breasts
- 1 packet dry Italian Dressing Mix
- 1 Tbls. dry Ranch dressing mix
- 1 Tbls. paprika
- 1 tsp. chili powder
- 1 tsp cumin
- Dash cayenne pepper
- 3 cloves garlic minced
- Juice of 1 lime
- 1 cup chicken broth
- Flour or corn tortillas
- Salsa or diced tomatoes
- Shredded Cheese
- Sour Cream
- Avocado sliced
Instructions
- Place in a crock pot the chicken, dressing mixes, paprika, chili powder, cumin, lime juice, cayenne, garlic and broth. Cook on high for 3-4 hours or low for 6-7 hours, or until chicken shreds easily. Once chicken can be shredded easily, remove the chicken from the crock pot and shred. Place the shredded chicken back in the juices and stir. Serve the shredded chicken over a salad, in a tortilla, in enchiladas or even chicken tortilla soup. The leftovers store great in the freezer in a Ziploc bag. Enjoy!
