Butter Lime Corn on the Cob is the perfect combination of citrus, sweet & savory all brushed on a lightly grilled cob of corn. If you have not tried grilled corn on the cob yet, this will be a must on your summer menu this week! There are few things better than sweet, grilled corn on the cob smothered in a specialty butter. We have become huge fans of the Nacho Libre Chili Corn on the Cob we posted about a month ago. We switched up the butter recipe and came up with this Lime Butter Corn on the Cob that is also out of this world good!!
Ingredients
- 1 stick butter
- Zest 1 lime
- Juice 1 lime
- 1 tsp. garlic powder
- 1/2-1 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbs. cilantro, chopped
- 12 cobs of corn
Instructions
- Peel the corn husks from the cob. Rinse the corn on the cob and remove any excess husks strings. Heat a grill to medium-high heat. In a bowl, melt the butter in the microwave. Add the lime zest, juice, garlic powder, salt and pepper and stir. Brush the corn on the cob with butter on the top side. Add the corn to the grill and grill on all sides for a few minutes on each side. When the corn is nice and golden brown (on parts) and tender, remove from the grill and place on a plate. Brush the cooked corn with more of the butter. Serve warm.
