Buttermilk Chocolate Cake

It is a must to have a recipe in your back pocket for a moist, delicious, deep, chocolate cake recipe. Sometimes you just want the ooey-gooey chocolate dessert that satisfies all of your deepest cravings. My sister has been making this Buttermilk Chocolate Cake for many, many years now and it is a favorite EVERY TIME she makes it! We made this the other night for a family party and I snagged a piece before it was gobbled up and snapped a photo. So glad to finally be documenting this recipe so I can have it forever. It’s a keeper!

Ingredients

  • CAKE:
  • 2 cups sugar
  • 1/2 cup cocoa powder
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 1 cup hot water
  • Frosting:
  • 1 stick butter
  • 1/2 cup cocoa powder
  • 3 cup powdered sugar
  • 1/3 cup buttermilk
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Instructions

  • Preheat oven to 350 degrees.
  • In a mixing bowl, mix together the dry ingredients: sugar, cocoa powder, baking soda, baking powder and salt.
  • In a microwave safe bowl add the buttermilk and water. Place in the microwave for 2 minutes until hot.
  • Pour the mixture into the dry ingredients and stir until combined. Add the eggs and oil.
  • Spray a 9x13 pan with cooking spray. Pour the batter into the pan evenly. Place in the oven for 25-30 minutes, or until a toothpick comes out clean. While the cake is baking, make the frosting.
  • For the frosting, place the butter in a mixing bowl. Beat with an electric hand mixer until smooth. Add the cocoa powder, buttermilk, vanilla and salt and beat until smooth. Add the powdered sugar one cup at a time until the frosting is the right thickness.
  • Once the cake is done baking, remove from the oven and let cool for 5-10 minutes. Frost with the frosting and serve slightly warm with vanilla ice cream.
