Before the weekend comes, I wanted to share with you some of my favorite breakfast recipes that would be perfect for your sweetheart this weekend. Who wouldn’t want to start out Valentines Day with a warm, homemade breakfast brought to them in bed? Here are some of my all-time favorite breakfast recipes for you to enjoy!

Blender Crepe Recipe
Crepes:
3 eggs
1 1/4 cup milk
3 Tbs. butter, melted
1-1 1/4 cup flour
1/4 tsp. salt
1 Tbs. sugar
Cream Cheese Filling:
8 oz. cream cheese, softened
1/4 c. granulated sugar
1 1/2 tsp. vanilla
Zest of 1 orange
In a blender, blend together the eggs, milk, and melted butter until smooth. Add the flour, salt and sugar and continue to blend until the batter is smooth and all combined. To cook, heat a nonstick saute pan on medium-high heat until hot. Brush the pan lightly with melted butter. For each crepe, pour in just enough batter to cover the bottom of the pan, tipping and tilting pan so the crepe is as flat and wide as you can get it (the thinner the crepe the better). Cook the crepe until light brown on the bottom and dry on top. You can try and flip the crepe to cook on the other side, or because it’s so thin you can just cook on one side. Remove the crepe from the pan and stack on a plate. Makes 12 crepes. Fill crepes with cream filling (recipe below), fresh fruit, and drizzle with syrup if desired.
For the cream cheese filling, soften the cream cheese in a bowl and with an electric mixer, blend all of the ingredients together until smooth. Place the filling in the middle of each of the cooked crepes and top with fruit and syrup. Or, you can use vanilla yogurt.
Cranberry Compote (or any berry sauce)
12 oz. fresh cranberries or frozen
1 cup sugar
Zest and juice of one orange
Add above ingredients into a small saute pan and let simmer on low heat until combined and the sugar is dissolved. Drizzle the fruit over crepes when they have been filled and wrapped.
