Ingredients
- 1 6 oz. bag spinach
- 1 head lettuce chopped
- 1/2 cup croutons
- 6 oz. fresh raspberries
- 1/2 cup candied pecans
- 1/2-1 cup feta cheese or gorgonzola
- 1/2 red onion diced
- 2 boneless skinless chicken breasts diced
- DRESSING:
- 1/2 cup fresh or frozen raspberries
- 3/4 cup raspberry jam
- 1/4-1/2 cup sugar
- 1/2 cup apple cider vinegar
- 1 garlic clove minced
- 1/4 cup vegetable oil
- Salt to taste
- 1 tsp. salt
Instructions
- Cook (grill) chicken breasts and cook until center is no longer pink. Season with salt and pepper and then dice into 1/2 inch pieces when cooked. In a large bowl place the chopped lettuce and spinach. Add the croutons on top, fresh raspberries, candied pecans, feta cheese, chicken and onions.
- For the dressing, mix all the ingredients together in a blender. Add a little more sugar or fruit to make sweeter...the dressing is meant to have a sweet and tangy flavor. Drizzle dressing over the salad.
